5、························9致·····························································10摘要:脱蜡是油脂精炼工程中的重要的工艺之一,它与脱胶、脱酸、脱色、脱臭工艺密切相关,是制取高级色拉油必不可少的一道工序。目前,我国市场上的色拉油主要以经营大豆油、菜籽油等大宗油脂中不含或含蜡量极少的品种为主,而对含蜡较多的葵花籽油、米糠油、棉籽油以及玉米胚芽油等油脂则较少涉及,虽然也有述。在我国油脂脱蜡工艺中,不论是在理论上,还是在实践上都尚属于相对薄弱的环节。现结合所学知识和实践,将国外油脂脱蜡技术以及相关

6、新工艺容作一阐油脂脱蜡就是通过强制冷却将液体油中所含的高熔点的蜡与高熔点的固体脂析出,再采用过滤或离心分离方法将其除去的过程。目前国外主要有传统的脱蜡工艺、脱酸-脱蜡工艺、低温脱酸脱蜡工艺、精细抛光过滤脱蜡工艺、S.O.F.T脱胶和脱蜡法5种工艺。关键词:油脂精炼工程、色拉油、含蜡量、熔点、脱蜡工艺、搅拌绪论食用级的高品质食用油,它的质量要很高的,无论从外观、气味、适口性、食用品质以及营养价值来讲,它的质量标准都是苛刻的,但是,如果油脂中含有少量蜡,在温度不高的情况下,它的透明度会降低,并且由于它在油中是悬浊液,会对色泽造成一定的影响,在北方地区犹为如此。还有油中含蜡,会使消化吸收率
