3、onthemarketisimportedproduct,therefore,thedevelopmentofcheeseinduetryisimminent.Firstproblemwefacedtogetindustrialproductionistoobtainstable,goodperformancecheesestartercultures.Atpresent,foreigncompanieshadcompletedthehi【ghactivityofdirect·vat—strain,andmono
4、polizedthedomesticandforeignmarkets.Ourcountryisstillrelativelybackward.Thisexperimenthasstudiedtwoidentifiedlactococcuslactisstrains’fermentationcharacteristicswhichincludedacid-producingability,extracellularpolysaccharidepropertyandproteolyticactivity.Andhi
