7、的重要来源,因其种类繁多,如菊花,甘草,忍冬藤,金银花,决明子,等中草药抗氧化成分复杂,因此活性差异较大。用于开发体内自由基清除药物,保健品,和食品的抗氧化剂。中草药中的抗氧化活性物质有黄酮,多酚,生物碱,多糖,皂苷等等,都是非常好的天然抗氧化活性成分。本文以忍冬藤为例。其成分有皂苷,绿原酸,黄酮,多糖,都具有清除自由基能力和抗菌能力。忍冬藤能采用多种方法分析其抗氧化活性。DPPH方法是目前最常用的检测清除自由基能力被广泛应用于实验室中。福林酚法用于检测样品中的总酚含量,是研究抗氧化活性的因素之一。ABTS法原理与DPPH相似,都是

8、应用到了抗氧化活性物质具有自由基清除的能力。铁离子螯合法,通过测定样品的铁离子螯合能力从而得出样品的抗氧化能力大小。样品的螯合能力越强,则抗氧化活性也越强。还原力测定法也是最常用的方法之一。关键词忍冬藤;DPPH;福林酚法;ABTS,
