1、CAC/MISC3Page1of39INVENTORYOFPROCESSINGAIDS1CAC/MISC3INTRODUCTIONThisInventoryofProcessingAidswaspreparedbytheCodexCommitteeonFoodAdditivesandContaminants.TheobjectivesoftheCommitteeare:(1)todevelopinformationonsubstancesusedasprocessingaidsand(2)toidenti

2、fyprocessingaidswhosesafetyshouldbeevaluatedbytheJointFAO/WHOExpertCommitteeonFoodAdditives(JECFA).TheInventoryofProcessingAidscataloguessubstancesthatareusedinfoodsolelyasprocessingaidsasdefinedbytheCodexAlimentariusCommission(seeSection2-Definitions).Th

3、eCommitteenotesthatthecharacteroftheInventoryisnotintendedtobecompleteora"positivelist"ofpermittedaids.TheInventoryisarrangedintabularformatforpresentationofinformationthatwillbenecessaryfortheCommitteetoselectsubstancesforJECFAevaluation.Thefollowinginfo

4、rmationisprovided:·Category-thefunctionaleffectclassification.·Processingaid-thechemicalnameordescriptionofthesubstanceusedasaprocessingaid.·Areaofutilization-thefoodsorfoodprocessingproceduresinwhichtheprocessingaidisutilized.·Levelofresidues-thelevelofp

5、rocessingaidremaininginfoodafterprocessing.Thelevelsshouldbedesignatedwithrespecttothose:(1)directlymeasuredbyanalysisor(2)estimatedbyothermeans.Valuesareinmg/kgandvaluesatthedetectionlimitofavailableanalyticalproceduresarereportedas"lessthan"(<).·Interac
