2、C法测定大豆异黄酮含量。色谱柱:DiamonsilC1柱(250mrn×4.6nlm,5/zm),流动相:乙腈3冰乙酸,梯度洗脱,流速:lml/min,柱温:3O℃,检测波长:261nm。测定发酵过程中大豆苷、染料小苷、大豆苷元、染料木素的含量变化。结果:随着发酵时间延长,各组大豆苷、染料木苷含量呈逐步下降趋势,苷元含量呈增加趋势,12d后变化趋于稳定。组4的大豆苷、染料木苷含量显著低于组2、3(P<0.01),多数大豆苷元、染料小素含量显著高于组2、3(P<0.01)。结论:在淡豆豉发酵过程,桑叶、青蒿可以促进大豆异黄酮苷向苷元的转化。[关键词]淡豆豉;
