2、ontainingVPPisappropriatetotheirintendeduse;and(ii)principlesfortheappropriatelabellingoffoodscontainingVPP.2.SCOPEThesegeneralguidelinesareintendedtoapplytoallsituationsinwhichproteinsderivedfromvegetablesourcesotherthanSingleCellProteinareutilizedinfoods

3、.3.DEFINITIONSAvailableAminoAcids:Aminoacidsfromfoodproteinsthatareabsorbedandareavailableformetabolism.AminoAcidScore(formerlychemicalscore):(mgofthelimitingaminoacidin1.0goftestprotein)/(mgofthesameaminoacidin1.0gofproteinasdefinedbythereferenceaminoacid

4、pattern).Bioavailability:Theextenttowhichanaminoacidorotheressentialnutrientisabsorbedandavailableformetabolism.Complementation(ofproteins):Theincreaseinproteinnutritionalvalueachievedbymixingtwoproteins,whichhavedifferentlimitingaminoacids,inthoseproporti

5、onswhichresultintheproteinqualityofthemixturebeinghigherthanthatofeitherofthecomponentproteinoccurswhenthefirstproteinhasanexcessoftheaminoacidwhichislimitinginthesecondproteinandviceversa.Limitingaminoacid:Theessentialaminoacidofafoodproteinpresentinthelo

6、westproportionrelativetotheamountofthataminoacidintheReferenceAminoAcidPattern.NetProteinRatio(NPR):(weightgainoftestgroupofratsplusweightlossofnon-proteingroup)/(proteinconsumedbytestgroup).NutritionalAdequacy:SeeSection7.2.ProteinQuality:Theextenttowhich

7、aproteinsourceprovidesessentialaminoacidsandindispensablenitrogenformeetinghumanrequirements.Proteinqualityisprimarilydeterminedbythelevel,distributionandbioavailabilityoftheessentialaminoacidsinaproteinsource.ReferenceAminoAcidPattern:Thelevelsanddistribu
