2、thhydrolysisofproteins.Relativetoextractaminopeptidaseformanimalsandplants,microbialfermentationofaminopeptidasehastheadvantagesoflow-cost,largeoutput,highactivity.ThispaperfocusesonsolidstatefermentationandliquidsstatefermentationofaminopeptidasebyMonascus,screen
3、ingouttheoptimalconditionsforproductionofaminopeptidase.aminopeptidasewerepurifiedbyingusingtwoaqueousphaseextractionandultrafiltrationandweexploratedtheprocesswhichcouldenlargetheextractionofaminopeptidase.Inaddition,wepreliminarystudiedtheenzymaticpropertiesofpu
4、rifiedaminopeptidase.Solid。statefermentationandliquidfermenmtionconditionofaminopeptidasebyMonascuswereoptimized,enzymeproductionconditionsoptimization,theresultsshowedthat:liquidfermentation.ofaminopeptidasecostedrelativelyshortertime.Andenzymeactivityreachedthem
5、aximumactivityafter7days,whichwas376.9U/mL.ontheotherhand,enzymebySolidstatefermentationafter13dayswhichwas115.3U/mL:HowtopurifycrudeaminopeptidasesolutioninMonascusfermentationproductswasstudiedandtheresultsshowedthataftermakingLinearamplificationexperimentOfopti
6、mizedtwoaqueousphaseextractionsystembasedoncrudesolutionproducingbysolidformentation,proteinpartitioncoefficientKp,enzymepurificationcoefficientKandtherecoveryrateofenzymewerealmostdoesnotchange,indicatingthatthissystemcanbeexpandusedforaminopeptidasecrudeenzymeex
