1、内蒙古农业大学硕士学位论文裸燕麦方便米的加工工艺及燕麦米饭抗老化的研究姓名:姚岭柏申请学位级别:硕士专业:农产品加工及贮藏工程指导教师:张美莉20080501摘要采用内蒙地区所产的裸燕麦为原料,通过对其主要工艺打磨时间、浸泡时间、蒸煮时间、干燥温度的筛选,在以上单因素工艺环节基础上,进行L16(45)正交试验,制作出口感和风味适合与米饭搭配的方便燕麦米,并对燕麦的主要营养成分和功能因子进行测定。加工制得的燕麦米饭进行抗老化的试验,在单因素的基础上对燕麦米饭的浸泡条件、单甘酯添加量和加水量进行b(34)正交试验,以确定抗老化的最佳组合,方法为在2"-'4
2、℃条件下冷藏7d,采用糖化酶法测其糊化度。并对抗老化和未抗老化的燕麦米饭进行扫描电镜比较。实验结果表明,方便燕麦米加工工艺的最佳组合——打磨5min,浸泡30min,蒸煮30min,以120℃干燥。试验测得方便燕麦米的蛋白质含量是大米的2倍,脂肪含量是大米的13倍,燕麦米中的不饱和脂肪酸占脂肪酸总量的81.28%,其中亚油酸含量最高,占不饱和脂肪酸含量47.22%,其次是油酸含量占33.83%。燕麦米中p一葡聚糖的含量较高,占燕麦米的6.02%。抗老化试验结果表明,最佳组合为0.8%a一淀粉酶溶液浸泡,蒸煮时添加0.6%单甘酯,加水量1.2倍的处理抗老
